Vital Signs: This consists primarily of Grasparossa with a touch of Pinot Noir with enough skin contact to deliver loads of fresh berry fruit but not enough to register any grip to speak of. This is a thoroughly modern wine, stylish and refreshing but nonetheless rooted in tradition and inspired by the vineyard workers who once made their own pale fizz from the runoff of grapes they were hauling.
Uncle Bill's Take: Brut de Noir evokes Champagne, but this is sturdier stuff. It has all the fresh, floral tones you might imagine but coupled with a richer, creamier mouthfeel than most entry-level Champers can manage. It's a bit of a hybrid wine, cut from a different cloth than most Lambrusco but still bearing the family resemblance.
Temperature: 50˚F
Pairing Suggestions: This is perfect on its own as an apéritif but equally delightful with almost anything. It's bright and racy enough to accompany a summer salad but also has the gravitas to go with meatier dishes, although I find myself wanting a local cheese board anchored by massive chunks of Parmigiano Reggiano.
