Vital Signs: Cabernet Franc from a stony south-facing slope. The legendary Clos de l'Echo derives its name from the echo sent back by the adjacent castle walls. Once owned by the great French satirist Francois Rabelais and his family, the vineyard was purchased in 1952 by the Couly-Dutheil family and replanted the following year.
Uncle Bill's Take: There's something incredibly sophisticated about Chinon to me, like Cabernet France polished to the height of refinement. It exudes class and for all of its elegance and acid, is surprisingly substantive when done well. This is a classic example. There's nothing novel or avant-garde about it. It tastes exactly as it should, predictable in the best possible sense of the word.
