All Xynisteri, native Cypriot varietal and one of two allowed in Commandaria (along with Mavro). The wine is made from overripe grapes then dried in the sun. It is aged in oak and incorporated into a larger solera to ensure a consistent final product. Cyprus was very much a crossroads of the Ancient World, and ancients of all stripes loved this stuff.
