85% Assyrtiko, 5% Athiri, 10% Aidani, all native to the island with the Aidani and Athiri mellowing Assyrtiko’s natural livewire acidity. The grapes are dried in the sun for two weeks, and the wine is then aged in oak for five years. Sweet Vinsanto is perhaps Santorini’s most significant contribution to the wine world. The name Vinsanto can be traced back to the 16th Century, when wine was exported from the island in barrels branded as wine (vin) from Santorini (Santo).
