Uncle Bill's Take: Nerello Mascalese and Nerello Cappuccio are Mt. Etna's noble native grapes, often described as a cross between Pinot and Nebbiolo although they’re thought be offspring of Sangiovese. Mascalese is the more serious of the two that comprises the bulk of Etna red blends. It is thick-skinned and high in acidity, making for wonderfully ageworthy wines.
