Vital Signs: This is 100% Lambrusco di Grasparossa, organically grown and bottled without added sulfites. Grasparossa is the self-anointed King of Lambrusco sub-varietals with the most tannic grip and aging potential. This comes from a small family farm and is made the old way, bottled early with fermentation wrapping up under pressure to capture the fizz.
Uncle Bill's Take: This is Lambrusco as it once was, bottled with the fine lees for something more spirited and primal. Grasparossa drinks very much like a red wine, and it begs for meat. Do yourself a favor and fire up the grill or the smoker. You'll thank me later.

Pairing Suggestions: We've covered BBQ, but not all Que is created equal. This is more of a Texas brisket wine to me. It could go well with St. Louis-style ribs or Carolina pulled pork, but I'd rather have low smoke and sauce on the side.
