Vital Signs: Sorbara is the prettiest of the major Lambrusco sub-varietals, renowned for its delicate floral, fruity flavors. As you might guess by the name, this is an homage to an earlier generation, made in the méthode ancestrale (fermentation finished in the bottle) and unfiltered. It is decidedly pink and just on the dry side of off-dry but utterly delicious.
Uncle Bill's Take: This is a single vineyard showcase of a rather finicky grape that gives exuberant, joyful wines. It has a creamy texture through the influence of the lees that gives to gravitas you wouldn't typically associate with something so fresh and floral.

Pairing Suggestions: Something about this wine crazes fresh cheeses to me, be it ricotta or chèvre or good mozz. It would go equally well with a summer garden's worth of produce or simply prepared seafood, especially something with the subtle sweetness of good scallops, crab, or shrimp.
