Vital Signs: All Chardonnay, all the time. The old vines are organically farmed and harvested manually and notably late at a very high ripeness level. The grapes are pressed very slowly and gently. After settling, the juice is fermented in tank with indigenous yeasts, very slowly, taking up to two years to finish; there are often a few grams of residual sugar remaining in the wine.
Uncle Bill's Take: This is a positively unctuous wine in the best possible sense. Bruce calls it the Steely Dan of Chardonnay, because his wife hates all the overwrought jax solos but he can't get enough. Just like "Deacon Blues," this wine is a little extra, but I can't resist its charms either. Every note is just right and the acid is bracing enough to carry the apple load. Sure, it's not for everyone but neither is jazz rock.
