Vital Signs: Vouvray encompasses an astonishing variety of wines derived from the same grape, Chenin Blanc. This version is bone dry, sourced from 50 - 70 year old bush vines from a walled single vineyard (the namesake "Clos"). The winemaking is ancient and avante garde with 20% of the wine put in a clay amphora and 80% in 400 liter French oak barrels (10% of which are new).
Uncle Bill's Take: Vincent Carême was practically born in the vineyard, destined for a life in wine. His cellar is a traditional 16th century trogolodytic "cave" which is hand carved into the limestone rock. He respects the land (having fully certified the estate as organic) and makes wine with as little intervention as possible. That said, I love that he deploys amphora to enliven one of his proudest wines. As steeped as they are in proud history, Vincent and his like-minded friends are still innovating.
