Vital Signs: 58% Macabeu, 39% Xarello, and 3% Parellada; the interesting, slightly earthy flavors that distinguish Cava from most Champagnes are generally attributed to Xarel-lo grapes. Macabeu and Parellada are less finicky early ripeners that are used to flesh out the blends. This is truly a labor of love from a producer committed to showcasing the best of what their land has to offer. The limited time in oak gives it a rich nuttiness very different from typical Cava and perhaps more reminiscent of vintage Champagne. The lively minerality and fresh salinity on the finish make it distinctively Spanish and utterly memorable.
